Here’s this week’s meal plan including Sweet potato falafel and Guilt Free fish and chips from Dean Edward’s book “Feelgood Family Food” which I really recommend.
I’m trying to simplify our meals a lot and pack more seasonal veg in, hence the soup – we have a glut of tomatoes in our veg patch!
I also thought I’d share a recipe for Autumn Compote which I’ve made today for the first time this year. It’s great with porridge or as part of a breakfast bircher or with yoghurt if you fancy a lean pud! I’ve adapted a recipe from @minieats on instagram:
300ml apple juice
1 tbsp honey
1 tsp Cinnamon (or leave a Cinnamon stick in whilst cooking)
2 apples
2 pears
100g raisins / figs / dates / whatever you fancy!
Boil the honey and apple juice, add the dried fruit. Simmer for a few minutes. Add the peeled and chopped apples and pears. Simmer until reduced to a syrup and fruit softened. Decant into sterilised jars or tupperwares. Will keep in fridge for about month or in the freezer for a lot longer!!!
