It’s cold and grey outside. The urge to hibernate is strong. I, like a lot of people, find this time of year tough. Call it Seasonal Affective Disorder, call it the January Blues, the grey days and poor weather mean I struggle to stay awake let alone get motivated.
One thing I decided to do to try to combat this was get back on the meal planning. This way I know I’m eating well and so is my family, and it gives me some control over at least one aspect of life, whilst I work out how to make it continually sunny.
Since both children are now at school having school lunches, I got out of the habit of meal planning. They only need a supper style tea after school and it’s easier just to cook beans on toast when you don’t have the responsibility of providing nourishing meals for the kids.
This week I took inspiration from Pinterest for a couple of new recipes which I’m looking forward to trying.
Grilled pesto salad flatbreads
Sweet potato and feta tart
The rest of the meals are economical January freezer favourites. I’ll double the meatball recipe and probably the sausage and apple casserole.
