Happy St David’s day.
I’m part Welsh and grew up with my grandma making Welsh cakes on her Welsh stone which belonged to her mother.
I now have the honour of looking after the Welsh stone and make a point of making Welsh cakes every March 1st.
This year I’m poorly so I can’t but thought I’d share my recipe with you all.
If you don’t have a Welsh stone you can use a heavy bottomed frying pan.
Welsh cakes
8oz self raising flour
4oz butter
2oz caster sugar
1 egg
2 oz sultanas (optional)
1tsp baking powder
Pinch of nutmeg
Sieve the dry ingredients and rub in the fat. Then add the sugar. Add sultanas if you like.
Mix into a soft dough by adding the beaten egg gradually.
Knead for a couple of minutes.
Roll out to 1/2 inch thick.
Cut into rounds and place on hot dry stone. Cook for approximately 3 minutes on each side or until golden brown.
Sprinkle with sugar.
I like mine smeared with butter.

I haven’t made Welsh Cakes in years! I really should dust off my griddle pan, the smell of the hot cakes on that is almost as good as the taste!
